“It’s bringing a made-from-scratch mentality to a family sports restaurant and creating that high-energy environment,” Doster said.
The scheduled opening date is June 12.
Doster said the restaurant will hire about 170 employees starting about eight weeks before the opening.
A Texas Alcoholic Beverage Commission permit is pending for the business, which will have a full bar. City Building Inspector Sammy Quiroz said the city has already approved zoning for alcohol sales at the site.
The restaurant is one of several commercial construction projects underway on the Highway 191 corridor, including other restaurants planned for the Parks Legado Town center and Dorado Center retail hub farther east.
“Everything is basically growing that way and just extending toward that area,” Quiroz said.
A building permit for Bubba’s 33 issued by the City of Odessa in January estimated a construction cost of about $800,000. The building itself, at 6153 State Highway 191, will be about 7,800 square feet.
A Bubba’s 33 opened in November in Midland, and the Odessa restaurant will be the 17th location nationally. Doster said the company decided to build the restaurant in Odessa in part because of the performance of Texas Roadhouse.
Plans call for the restaurant to be open for dinner on weekdays, and lunch and dinner on weekends, with TVs showing sports games.
“We are in the early stages of Bubba’s but we have found we have done well in cities where Texas Roadhouse has done well,” Doster said. “And our Texas Roadhouse in Odessa has done very well. That’s one of the reasons we found Odessa would be a good match.”
